I wandered at first if it was worth messing around with a classic but I can’t help myself and this Apple Fig Bircher Muesli is delicious. To a traditionally high carbohydrate breakfast, the addition of chia seeds and walnuts give a much needed lift to the fat and protein component of this meal whilst helping to balance your blood sugar. The Mediterranean style fruits add so much flavour and extra nourishment to every bite. This version is fabulous all the way!
DAIRY FREE | RAW | WHOLE FOOD | GLUTEN FREE (option)
Ingredients:
1/4 cup black chia seeds
2 cups rolled oats*
finely grated zest of 1 lemon
8 medjool dates, stoned and finely chopped
1 1/3 cup greek no sugar yogurt
1 1/4 cup milk of choice
2/3 cup freshly squeezed apple juice
2/3 cup lightly toasted walnuts
1/2 cup lightly toasted flaked almonds
2 small green apples, grated
1 cup seedless red grapes, halved
2 tablespoons rice malt syrup or honey
4 fresh figs
1 pomegranate, seeded
Method:
1.Place chia seeds, oats, lemon zest, dates, milk, apple juice and half the yogurt into a bowl. and mix to combine.
2.Cover and refrigerate over night.
3.Before serving, stir through nuts, grated apple and grapes.
4. Serve the bircher muesli with remaining yogurt, a drizzle of rice malt syrup or honey and top with fresh figs and pomegranate.
*Oats naturally contain small amounts of gluten. You can purchase gluten free oats or alternatively try this recipe with quinoa flakes instead of the oats.
